should be added to the portainer editor, can be an env file if you want to complicate things from the command line... at the end of the day what you do in the editor ends up in the filesystem (/var/lib/docker/volumes/ and /var/lib/docker/volumes/portainer_data/_data/compose/ and such... I usually let portainer handle it... easy to backup!)
